Creamy Chicken Soup

Craig's 37th birthday was last Friday. OU/ Texas was Saturday.. so his request for our game day food was some type of soup or chili. I found this recipe on Pinterest, and ran it by him. He agreed that it sounded good. And good it was! And so easy to prepare! We will definitely be doing this again.

Creamy Chicken Soup

What You Need:
4 frozen chicken breasts
2 cans of rotel
2 cans of corn
2 cans of black beans, drained and rinsed
2 blocks of cream cheese
2 packages of dry ranch dressing

What You Do:
Put all ingredients in a crockpot. Cook on low 6-8 hours.

We served ours with a few tortilla chips crushed on top.

Pumpkin Chocolate Chip Kissed Cookies

I found these cookies on a blog, they sounded yummy and very fallish, so I made the trip around all of Oklahoma to find Pumpkin Spice Hershey Kisses. I found them. And the cookies were delish.

Pumpkin Chocolate Chip Kissed Cookies

*2 sticks softened butter
*1 Cup granulated sugar
*3/4 Cup packed light brown sugar
*2 large eggs
*1 Tablespoon pure vanilla
*1 Cup pumpkin, from can
*3 1/4 Cups all purpose flour
*1 teaspoon salt
*1 teaspoon baking soda
*1 teaspoon ground cinnamon
*1/4 teaspoon fresh grated nutmeg
*12 oz bag chocolate chips
*30 or so unwrapped Pumpkin Spice Kisses, quartered

1. Preheat oven to 350 degrees F. In stand mixer, cream butter and sugars until light and fluffy. Beat in eggs and vanilla until well combined then add pumpkin.
2. Place flour, salt, baking soda, cinnamon and nutmeg into large bowl; mix to combine then slowly add to wet ingredients then chocolate and kisses. Mix only until just combined.
3. Scoop medium cookie scoop of dough onto a silpat or parchment lined baking sheet, about an inch apart. Bake for 9-11 minutes or until edges just begin to brown. Let cool on pan for 5 minutes before removing.
