Cherry Cheesecake Dip

So So SO good.  So so easy.  It would be a great dessert to take to picnics or pot lucks.  Or to make when you have company.  Really really good!

Cherry Cheesecake Dip

What You Need:
*1 box Jello Cheesecake No Bake Pudding
*Milk (per the package directions)
*Cool Whip
*1 can Cherry Pie Filling
*Graham Crackers 

What You Do: 
*Make pudding according to package directions
*Stir in Cool Whip
*Before serving, top with cherry pie filling
*Serve with graham crackers for dipping

Red Velvet Poke Cake

I have mentioned before in this blog that Craig's favorite cake is Red Velvet.  So I am constantly on the lookout for new ways to do red velvet.  This was super easy and very good!  You could probably do this idea with any type of combos that you like!

Red Velvet Poke Cake

What You Need:

*1 box Red Velvet cake mix
*ingredients needed to make cake (eggs, oil & water)
*2 (3.4 oz.) boxes instant Cheesecake-flavored pudding
*4 cups milk
*1 (8 oz.) tub frozen whipped topping, thawed
*10 Oreo cookies, crushed (optional)
 
What You Do:
 
*Prepare cake mix according to package directions for a 9x13 cake.
*Once cake comes out of the oven, allow it to cool for just a couple of minutes.
*Then, with a wooden spoon handle or some other similarly-sized object, begin poking holes in the warm cake.
*You want the holes to be fairly big so that the pudding has plenty of room to get down in there. 
*Be sure to poke right down to the bottom of the cake.
*In a medium bowl, whisk together dry pudding mix with 4 cups of milk.
*Whisk until all the lumps are gone.
*Pour pudding over cake. Taking care to get right into the holes as much as possible.
 *Spread it all out and using the back of the spoon, gently push pudding down into the holes.
*Put the cake into the fridge to set and cool (about 2 hours). 
*Once your cake has completely cooled, spread on whipped topping.
*Spread crushed oreos on top right before you are ready to serve

BBQ Chicken Dip

We made this dip for a little get together we were having- it was SO SO delicious.  You should make it for your Super Bowl party. :)

BBQ Chicken Dip

What You Need:
12 oz cooked chicken, chopped
1 (8oz) block cream cheese, softened
3/4 cup bbq sauce
1/4 cup ranch dressing
1/4 cup sour cream
1 1/2 cup cheddar cheese, shredded
1 green onion, chopped

What You Do:
Preheat oven to 350.
In a mixing bowl combine chicken, cream cheese, sour cream, ranch dressing, barbecue sauce, and 1 cup of cheddar cheese. Pour mixture into a lightly greased 8x8 baking dish. Top the dip with chopped green onion and remaining cheese. Bake for 25-30 minutes or until bubbly.

A Different Tuna Salad

Sometimes Craig and I need an easy lunch option.. and we both really like tuna salad.  I found this recipe on Pinterest.. and it is a bit different from the normal tuna that I make.  We tried it and both really loved it.  The flavors were alittle different and unexpected.  But really really good!

A Different Tuna Salad

What You Need:
1 (7 ounce) can white tuna, drained and flaked
6 tablespoons mayonnaise or salad dressing
1 tablespoon Parmesan cheese
3 tablespoons sweet pickle relish
1/8 teaspoon dried minced onion flakes
1/4 teaspoon curry powder
1 tablespoon dried parsley
1 teaspoon dried dill weed
1 pinch garlic powder

What You Do: 
In a medium bowl, stir together the tuna, mayonnaise, Parmesan cheese, and onion flakes. Season with curry powder, parsley, dill and garlic powder. Mix well and serve with crackers or on a sandwich.

Creamy Burrito Casserole

See- we make mexican food alot!  This was super yummy.  And super easy.  It was one of the casseroles where I left everything and Craig got it all ready for us on his day off.  Its definitely a do againer in our house.  :)

Creamy Burrito Casserole

What You Need:
1 lb ground beef or 1 lb ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
What You Do:
*Brown ground meat/turkey and onion; drain.
*Add taco seasoning and stir in refried beans.
*Mix soup and sour cream in a separate bowl.
*Spread 1/2 sour cream mixture in the bottom of a casserole dish.
*Tear up 3 tortillas and spread over sour cream mixture.
*Put 1/2 the meat bean mixture over that.
*Add a layer of cheese.
*Repeat the layers. 
*Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

Mexican Cole Slaw

We make Mexican food alot.  Side dishes are always hard for me.  Alot of times, I dont want to necessarily have to COOK another side dish.  I like something fresh, and my kids are always up for some kind of salad.  So, this cole slaw was perfect! 

Mexican Cole Slaw

What You Need:
1 package Slaw Mix
1 can corn {drained)- or the equivalent frozen
 1 can black beans {drained}
1/3 cup diced green onions
1 cup diced tomatoes
 1/2 cup diced black olives
1/4 cup diced cilantro
1 avocado chopped
 3/4 cup Jalapeno Ranch Dressing (we couldnt find jalaneno ranch.. we used chipolte ranch). 

What You Do:
Mix together and serve!

Rosemary Cranberry Spread

We made this for an appetizer on Christmas morning. It took me no time to put together the night before.  I served it with crackers- and everyone really liked it.  Jackson LOVED it!  Its not a recipe that I will make all the time, but it definitely was great for the holidays.

Rosemary Cranberry Spread

What You Need:
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 4 tablespoons dried sweetened cranberries
  • 2 teaspoons chopped fresh rosemary
  • fresh cracked pepper and kosher salt
 What You Do:
  1. Place all cream cheese into a bowl and using a spoon, fold in all ingredients until well combined.
  2. Serve along side crackers or toasted baguette slices.

Crock Pot Beef Tips

This was a great recipe- super easy!  And perfect for a cold day! 

Crock Pot Beef Tips

What You Need:

3 lbs stew meat
1 can 7up, Sprite or other lemon-lime soda (can be reg or diet)
1 pkg Onion Soup Mix
1 pkg Brown Gravy Mix
1 can Condensed Mushroom Soup
fresh mushrooms sliced (optional)

What You Do:
Mix all together and cook on low for 6 - 8 hrs in slow cooker. Serve over buttered egg noodles.

Cheesy Carrots

The next few posts will be recipes that we have tried and LIKED from pinterest.  The bad news:  I took no pictures.  But believe me- if I am blogging them, they are worth your time.  Super Super yummy.

The back story on this recipe, is that Mom and I were talking about our Christmas lunch.  I told her that I wanted her to make her cheesy carrots that she makes.  She had NO IDEA what I was talking about.  I swear she made some carrots.. just carrots, not other vegetables covered with cheese.  She went through her recipes and she swears she has no recipes like I described.  To prove I wasnt crazy, I texted my sister in law, Reese, to confirm that she remembered mom making a cheesy carrot dish.  She did not remember.  So clearly I am crazy.  However, I know I have had them, and I wanted them for Christmas.  Good thing I had pinned a recipe for these cheesy carrots. 

Friends, they are SO good.  Everyone liked them.. my 3 year old and 18 month old included.  Make this side dish.
Cheesy Carrots

What you Need:
What You Do:
  1. Make white sauce: In a large sauce pan, melt butter in saucepan, add flour and stir to combine. Once you have your roux, add half and half and stir constantly until sauce thickens. Remove from heat and stir in salt, onion powder, dry mustard, pepper and celery salt.
  2. In a 9x13 pan, layer peeled and sliced carrots, then white sauce, then evenly sprinkle shredded sharp cheddar cheese over white sauce.
  3. Evenly sprinkle bread crumbs (panko)  over shredded cheese on the casserole.
  4. Cover casserole with foil and Bake at 350 degrees for 20 minutes. After 20 minutes, uncover and bake for an additional 15 minutes
